Pancake Day 2022 is next Tuesday, March 1st.
Scotch pancakes are a big favourite in our house. This year, we're adding a Nantwich Gin twist to the old favourite topping of lemon juice and sugar. Here's our cheeky Nantwich G&T pancake syrup recipe, guaranteed to spice up your Shrove Tuesday.
Ingredients:
For the Syrup:
100ml Nantwich Gin
100ml Tonic Water
2 tbsp Caster Sugar
1 Lemon (juiced)
For the Pancakes (x20):
100g Self Raising Flour
25g Caster Sugar
150ml Milk
1 Egg
Optional Toppings:
Grated Lemon Rind
Blueberries
Cream
Method:
To make the Nantwich G&T syrup, place the gin, tonic, caster sugar and lemon juice into a pan. Heat and reduce for a few mins until syrupy. Allow to cool on the side whilst you work on the pancakes.
For the tasty scotch pancakes, add the flour and sugar into a bowl. Add the egg and half of the milk, beating the mixture into a thick batter. Carefully stir in the rest of the milk.
Lightly grease a frying pan. Spoon the pancake mixture in tablespoon measurements into the pan, spacing them apart from each other.
The pancakes will need to be flipped when bubbles rise to the surface. Flip with a pallet knife and allow to sizzle for around 30-40 seconds, until the scotch pancakes are golden on each side.
Serve the pancakes with a healthy drizzle of Nantwich G&T syrup. Get creative with any optional toppings you'd like - we recommend grating the leftover lemon rind, or adding blueberries (as a juniper berry substitute) and cream. De-lish!
